BROCCOLI CASSEROLE

1/2 c. onion, chopped

6 T. oleo

2 t. flour

1/2 c. water

1 small jar Cheez Whiz ( 8 oz.)

2 pkg. frozen broccoli spears (cut up)

3 eggs, well beaten

1/2 c. cracker crumbs

Cook broccoli and drain.  Sauté onions in 4 T. oleo.  Add flour and water.  Bring to a boil over low heat.  Blend in cheese.  Combine sauce and broccoli.  Add beaten eggs and mix gently.  Put into greased 1 1/2 qt. casserole.  Top with crumbs and the rest of oleo. Bake uncovered for 30-40 minutes at about 350 degrees.

Optional:

You may boil three chicken breast until tender, cut up, and push into the casserole before it is cooked.
