BROCCOLI CASSEROLE
White Sauce:
4 T flour
1 t. salt
1/2 stick margarine
2 c. milk
Melt the margarine over low heat and add the flour and salt, stirring to a thick paste. Gradually add the milk while stirring constantly to blend into a smooth sauce. Cook over low heat or in a double boiler until it coats the spoon.
Other ingredients:
4 hardboiled eggs, chopped
1 10 oz. pkg. chopped frozen broccoli (drained)
1/2 10 oz. pkg. extra sharp cheddar cheese, grated
In a two-quart casserole dish, place in alternate layers the broccoli, eggs, cheese and sauce, and repeat until all ingredients are used. Melt in small pan four tablespoons margarine and crumble 10 soda crackers into it. Stir until all the cracker crumbs are coated. Sprinkle this over the top of the casserole and place in a 350 degree oven for 30-45 minutes.
