POTATO CASSEROLE

4 to 5 med. size red Irish potatoes

1 med. onion, chopped

1 can cream of mushroom soup

1 pkg. Ranch salad dressing mix (dry)

1 lg. pkg. sharp cheddar cheese, grated

1/2 c. sweet milk

2 eggs, beaten

Dice potatoes (hunks, not slices) and cook until half done.  Pour off water.  Mix all ingredients with the above (save some cheese for topping).  Salt and pepper to taste.  Top with remaining cheese and bake at 350 degrees for 25-30 minutes.  May also add a package of pre-cooked broccoli.
