OKRA LOUISIANA STYLE

3 c. sliced okra

1/2 c. salad oil

1 c. canned tomatoes (with juice)

1 medium onion, chopped

1 medium green pepper, chopped

Salt and pepper to taste

1/2 t. red pepper

1 c. crushed cracker crumbs

Spread okra in greased casserole.  Top with other ingredients (except crumbs).  Cover loosely with foil and bake 1 hour at 400 degrees or until tender, stirring occasionally.  Uncover; top with crumbs and lightly brown.  Serves four.
