EGGPLANT CASSEROLE
1 eggplant, peeled and sliced
1 egg, beaten
2 T. water
3 T. oil
1 lb. ground beef
2 (8 oz.) cans tomato sauce
1/4 t. basil
1 t. salt
1 garlic pod or garlic powder
1/4 t. oregano
1/8 t. pepper
1 onion chopped
1/2 c. mozzarella cheese
Dip eggplant in egg and water and sauté in oil. Set aside. Brown ground beef, onions and seasonings. Add sauce. Layer with eggplant, beef and cheese. Bake 40 minutes at 350 degrees.
