STUFFED YELLOW SQUASH

WITH CHEESE SAUCE

3 yellow squash

1 T. salad oil

1 clove garlic, crushed

1/2 lg. ground beef

1/2 c. raw long grain rice

1/8 t. pepper

1 (16oz.) can stewed tomatoes cheese sauce

Cut cooked squash in half.  Scoop out seed.  Sauté garlic and beef about 10 minutes.  Add rice, salt and pepper.  Mix and cook for 2 minutes.  Preheat oven to 375 degrees.  Stir in tomatoes and 1/2 c. water.  Cook covered over low heat for 20 minutes until rice is done.  Fill squash.  Pour cheese sauce over the squash and bake 20-30 minutes.
