MRS. MURPHREE’S SWEET POTATO CASSEROLE

4-5 sweet potatoes, peeled and quartered

3 eggs

1 c. sugar

1 stick melted butter

1 small can evaporated milk

1 t. vanilla extract

Cook sweet potatoes in boiling water to cover for 20 minutes or until tender.  Drain and mash until smooth.  Add other ingredients & pour into greased dish.

Topping:

1 c. pecans, chopped

1 c. brown sugar

1 c. flour

1 stick butter

Let butter come to room temperature.  Mix all ingredients well and sprinkle over potatoes.  Bake at 350 degrees for 40 minutes.
