FRESH APPLE NUT CAKE

3 c. self-rising flour

3/4 c. vegetable oil

2 eggs

2 c. sugar

4 c. finely chopped apples (6 med.)

1 t. vanilla

1 t. cinnamon

1 c. finely chopped pecans

Combine cooking oil and sugar.  Add one egg at a time.  Sift together dry ingredients and add to first mixture.  Add vanilla, apples and nuts.  Mix with spoon.  Bake in well-greased pan at 350 degrees for one hour.
