ZUCCHINI BREAD

3 c. grated zucchini

3 c. sugar

4 eggs

1 1/2 c. oil

3 c. self-rising flour

1 t. vanilla

1 c. chopped nuts

1 1/2 t. cinnamon

Beat zucchini, sugar, eggs, and oil together.  Add flour, vanilla, nuts, and cinnamon.  Mix well.  Place in 2 greased and floured loaf pans.  Bake at 350 degrees for 1 1/2 hours.  Wait ten minutes before removing from pans.
